Pork Chops with Sage-Garlic Saute

This recipe originally called for a sage-garlic butter (amazing!).  However we are still doing our Whole30, and butter is out for 10 more days.  So I improvised and made a delicious saute.  This proves that just because you are making healthy lifestyle choices with your food, doesn't mean you have to sacrifice taste.

ingredients
2 TBS. grapeseed oil, divided
1 shallot, sliced
2 tsp. fresh sage, minced
4 large garlic cloves, minced
4 3/4 inch-thick pork loin chops

Heat 1 TBS. grapeseed oil in heavy small skillet over medium-low heat.  Add shallot and cook until fragrant and opaque.  Add sage and garlic and cook until fragrant 30 seconds more.  Remove from heat. 

Heat oil in heavy large skillet over medium heat.  Season pork with salt and pepper.  Cook until pork is cooked through, about 6 minutes per side. Transfer to plates.  Top with saute of shallot, garlic and sage.
