Lemon Basil Shrimp

ingredients
1 TBS. grapeseed oil
shrimp-I usually plan on 7-12 per person
2 lemons, sliced
4 garlic cloves, minced
1 shallot, diced
3 TBS. fresh basil, julienne
salt & pepper, to taste

Heat grapeseed oil over medium heat, saute shallot until fragrant, add garlic and shrimp.  Cook shrimp turning once, it will only take 2-3 minutes per side.  When shrimp are pink they are cooked completely.  If you cook them to long, they will become rubbery.  Add basil and sliced lemon when you turn the shrimp.  Serve in a bowl, making sure to pour in all the yummy juices.  Eat with your fingers, so you can scoop up the basil, garlic and shallots!
