Italian Dressing

 ingredients
olive oil, make sure you are using a good quality olive oil.  Spend as much as you can on olive oil.
balsamic vinegar
2 garlic cloves, minced
1/2 tsp. oregano
1/4 tsp. basil
1/2 tsp. shallot, finely chopped
1/4 tsp. salt

To balsamic vinegar add garlic, oregano, basil, and shallot.  Mix well and slowly pour in olive oil, until emulsified.  I love this dressing over baby spinach, pomegranate seeds, and slivered almonds.
